Make Your Own Streusel Coffee Wedding Cake

DIY Streusel Coffee Wedding Cake

There’s nothing I love more than weddings. Except for maybe breakfast food. Lucky for me, our latest free brunch wedding guide has them both. Welcome, raging wedding boner. With bright pops of color, a beautiful spread of fresh fruit and pastries, and pastel floral arrangements to die for, this free wedding guide will have you swooning down the isle.

Besides the gorgeous fruit and fizzy drinks, this brunch wedding features a fun (and oh so yummy) DIY streusel coffee wedding cake! Our three-tiered cake was large enough to serve 30-40 people with
1 inch(ish) slices.

If you’d rather not attempt to make your own wedding cake, no worries! Talk to your baker about making this delish dessert. Otherwise, scroll down for the how-to.

DIY Streusel Coffee Wedding Cake

Here’s what you’ll need:

  • Cake ingredients
  • 10 inch, 8 inch and 6 inch round cake pans
  • Wax paper
  • 3 cardboard cake rounds
  • Wooden skewers or cake dowels

Instructions:

1. For easy cake removal, cut 3 pieces of wax paper to line the bottom of each cake round.

2. Prepare your cake batter using the coffee cake recipe of your choice. We used a recipe from America’s Test Kitchen, but any coffee cake recipe with a streusel topping will work! (This Cinnamon-Streusel Coffee Cake recipe from Martha Stewart is also great!)

3. Divide cake batter evenly between the 10 inch, 8 inch and 6 inch round pans. Top with streusel. Bake according to recipe instructions. Since this cake doesn’t have frosting to hide imperfections, be very diligent to NOT over bake. Take the rounds out of the oven when the edges are a light golden brown.

4. Once rounds are completely cooled, loosen the edges of each tier with a sharp knife and turn out onto a flat surface. Gently remove the wax paper from the bottom each round.

5. It’s time to stack! Cut a cardboard cake round to fit the bottom of each tier. Cut skewers to fit the height of each tier. The skewers will act as supports so you don’t end up with a leaning (or sinking) tower of cake. Insert skewers around the center of each tier. Note: We didn’t insert a dowel through all tiers since our cake was on the small(ish) side, but make sure to add the dowel if you add any extra tiers.

6. Add beautiful, fresh flowers to the top tier. Flowers with a sturdy, thick stem will work best. Congratulations! You’re finished!

Variations:

  • Need more cake? Add another 12″ round bottom tier (about 40 more servings). Use this site to help calculate servings based on tier size.
  • While I certainly don’t miss the frosting in this moist cake, a glaze would be a great way to add more dimension. Martha Stewart’s recipe uses a glaze of milk and confectioners sugar. For a little extra flavor experiment with adding a few drops of vanilla, lemon juice or orange zest. Add more confectioners sugar if your glaze becomes too runny.
  • We used a flower cake topper, but anything would do! Pinterest has some great cake topper ideas.

It’s no secret that I love functional, practical favors. Why waste your money on personalized or monogrammed favors that your guests will just add to the donate pile within a year? Play it safe by showing your gratitude with an edible treat that everyone is sure to enjoy.

Now, I know I might get some flak for listing Jordan almonds as “tired,” but come on, ladies! I have nothing against this sweet treat — other than the fact that I have received these favors a billion times myself, and the rest of your wedding guests probably have too. It’s no secret that weddings are expensive. Actually I think the correct term is “WHAAAAAT??” followed by screaming and your parents taking out a second mortgage.

Flowers up the Wazoo

Yes, flowers are gorgeous and really brighten up a room. But paying up to $5 a stem for flowers is just plain ridonkulous. These days there are so many beautiful non-floral centerpieces that there is no reason to spend $6,000 of your wedding budget on decorations that will die within a week.

A Bazillion Bridesmaids

I’m all about having a huge wedding party — but unfortunately, more bridesmaids means more $$$, especially if you plan on buying their dresses or even just covering the cost of hair and makeup on your big day. Too Many People

This is HUGE. If I could get married all over again I would invite half the people and spend an extra week on our honeymoon instead. Once you figure in catering, favors, cake, booze AND rentals, you can EASILY spend $50 per guest (we spent $162 per guest, phew!). That’s MAJOR savings. Sure, making a tight guest list can be a bit difficult, but you’ll be SO glad you did when the wedding is long past and you can actually afford a down payment on a house.

Gourmet Food

I’m torn on this particular item, but it’s still worth noting. If you’re a foodie like me, you will love planning menus with your caterer — until you see the bill. DIZAMN! Adding pears and pecans to the salad costs WHAT?! Be honest with your caterer about your budget. They’ll work with you to find a menu that is tasty AND affordable. An Open Bar (GASP!)

I know this is a hard concept to swallow. ESPECIALLY if certain family members can’t get along without help from tequila shots. Never fear, you can still host a bar on a budget! Talk with your vendor about cheaper options. For our wedding we offered bottomless beer (one micro-brew and one domestic), wine (house red and white), and a champagne toast — but mixed drinks were cash only. OR nix the bar all together and serve one signature cocktail along with flavored ice water and assorted soft drinks.

Cater your own wedding: Fancy Croissant Sandwiches

Let’s keep it real for a second: Unless you plan on serving hot dogs, chips and twinkies, feeding 100 people ain’t cheap. And hiring a catering company ain’t cheap either (at least, not OUR version of cheap). So what’s a broke bride to do?

Cater your own wedding! Stop laughing. It’s really not THAT bad. With a small support group (that’s what bridesmaids are for!) and some smart planning, you can save MAJOR dough on your food and drink bill.

Enter our new “Cater Your Own Wedding” feature! In this series we’ll be sharing with you some awesome recipes that: 

  • Are easy to prepare ahead of time
  • Will still be fresh after a day or two in the fridge 
  • AND will save you oodles of cash

First up we have two beautiful artisan sandwich recipes that would be perfect for an informal picnic or brunch wedding. Our Steak with Brie & Sun Dried Tomatoes and Chicken Pesto Provolone sandwiches would even be great as hors d’oeuvres before a formal dinner (just quarter them and skewer with a fancy sandwich pick!). Plus, these sandwiches taste even BETTER after resting in the fridge overnight (or for a few days). No joke.

Best of all: For a guest list of 100 people, this menu item will only set you back $215. That’s only $1.43 each! Read on for the recipe and our budget breakdown!

Cater your own wedding: Fancy Croissant Sandwiches

Steak with Brie & Sun-dried Tomato Sandwich

Ingredients:
(Amounts are per sandwich)

  • Croissant, sliced horizontally
  • Tri-tip steak, grilled and thinly sliced – 1/4 pound
  • Canned, sliced sun-dried tomatoes packed in oil – 3 to 4 slices
  • Brie – 1 oz. (I used President brand)
  • Pre-washed, packaged spinach – 4 to 5 leaves
  • Mayo – 1 teaspoon

Instructions:
On the bottom half of the croissant, spread mayo and add sliced steak. Add sun-dried tomatoes. Top with spinach. Spread brie on top half. If the brie isn’t spreading easily, heat it up in the microwave. DO NOT walk away. Brie is already a very soft cheese and only needs about 5-10 seconds in the microwave to melt. Cut sandwiches in half and arrange on serving platter.

Chicken Pesto Provolone Sandwich

Ingredients:
(Amounts are per sandwich)

  • Croissant, sliced horizontally
  • Roasted chicken breast lunchmeat – 5 slices
  • Pesto (I used Buitoni)
  • Slice provolone
  • Mayo – 1 teaspoon
  • Pre-washed, packaged spinach – 4 to 5 leaves

Instructions:
On the bottom half of the croissant, spread mayo and add chicken breast. Top with spinach. Spread pesto on top half and add slice of provolone. Cut sandwiches in half and arrange on a serving platter.

Cost Breakdown:

The figures below are based on making 150 sandwiches (75 sandwiches, halved) for  a guest list of 100 people. For 75 steak sandwiches and 75 chicken sandwiches:

  • Croissants: $50
  • Tri-tip steak: $63.75
  • Jar sun-dried tomatoes: $15
  • Brie: $18.75
  • Sliced chicken lunchmeat: $18.75
  • Pesto: $32.80
  • Sliced Provolone: $8.50
  • Spinach: $5
  • Mayo: $3
TOTAL: $215.55 for 150 sandwiches, $1.43 each! 

I know that $215 can still seem a little steep for one dish, but remember that you are feeding a crowd! Catering bills can range between $15 – $20 PER PERSON and that doesn’t even include wait staff or tips. Add in a few tasty and cheap side dishes and you can EASILY save $1,000.

Still too pricey? Girl, we’ve all been there. Use these tips to save even MORE money!

  • Instead of buying pre-made pesto, make your own from fresh ingredients or use a pesto seasoning packet (just add oil and water).
  • Buy in bulk! Search for these items at Costo or Sam’s Club. If there isn’t a big box retailer in your area, many of these items are also available for bulk purchase online.
  • Use high-quality deli sliced roast beef instead of tri-tip steak. You’ll save big bucks AND you won’t have to grill and slice enough steak for 100 people.
  • Brie can be a little strong for non-cheese lovers, not to mention expensive. Swap for a milder, less expensive cheese like swiss or cream cheese.

Frugal favor: Homemade granola

I often think of a post-wedding morning as one of sleeping in, pressing the snooze button several times, and rushing around to get checked out of the hotel on time after a late night of fun.

That’s where this granola wedding favor comes in. Your guests will love you for this healthy breakfast on the go, plus homemade granola is so easy to make. And when I mean easy to make, I mean Rice Krispies treats easy. Granola takes just a few ingredients, time in the oven and voilà — you’ve got a boatload of tasty and inexpensive toasted oats, nuts and dried fruits.

Use this delish granola recipe from The Kitchen Sink. Granola is sort of like a cookie where you can add whatever you want and it never turns out badly, so choose your favorite dried fruits and nuts.

To make this favor: Fill each wax food bag with one cup of granola. Tie with a fun ribbon and our printable tag and you’re good to go.

If you ask me, Cinco de Mayo is a day just BEGGING for weddings. I mean, what isn’t to love? You’ve got bright, bold colors, booze, over-the-top dresses, booze, spicy food and … did I mention booze (we’ve even included a DIY for frozen booze!)?

DIY Vanilla Extract Favors

I photographed a wedding last summer where the bride and groom gave out homemade vanilla extract as favors and I thought it was the most adorable thing. So I’m stealing a page from their playbook and offering you this DIY tutorial today for your own vanilla extract favors. This is an extremely easy project that can be easy on the wallet too — follow the steps to make your own.

Supplies:

  • Vodka or Bourbon (or both)
  • Glass bottles with stoppers
  • Funnel
  • Vanilla Beans (Budget tip: Find these at a fraction of the price by buying them in bulk at a natural food store.)

1. Clean your bottles and let dry. Put one vanilla bean in each bottle.

2. Using your funnel, fill the bottles with alcohol — vodka makes a more classic vanilla extract and bourbon makes, well, a bourbon vanilla extract.

3. Seal them up and store in a safe place without too much light or heat for at least one month.

DIY Favor: Cheese and Crackers

As I’ve written in previous posts, I’m a huge fan of edible favors. They rarely go to waste and provide the sustenance your guests need to dance their socks off all night long or to wait patiently between the ceremony and the reception.

This favor features the classic combination of cheese and crackers — a crowd favorite and easy to make. Adding nuts and dried fruit provide variety for those non-cheese and cracker lovers (but really, how many people don’t love cheese and crackers?). You can easily make this favor match with your wedding theme by decorating the box with your colors or tying the box with a cute customized printable tag. Plus, this favor can be relatively inexpensive if you can buy all your food ingredients in bulk. Enjoy!

What you need:

  • Small paper mache boxes
  • Cardboard
  • Wax paper
  • Decorative wrapping paper
  • Cheese (Babybel and Laughing Cow cheeses can keep out of the fridge for a nice length of time)
  • Crackers
  • Dried apricots/cherries
  • Almonds

What to do:

  1. Wrap the lid and the box with the decorative wrapping paper.
  2. Layer the bottom of the box with wax paper.
  3. Make box partitions: Cut the cardboard into strips to fit the box’s width and depth according to how you want to section off your box. Wrap each cardboard strip with wax paper.
  4. Fill with food and place a box at each guest’s place setting or stack the boxes at the reception entrance.

Food variations: Other types of dried fruits and nuts would work just as well in this food box.

Box variations: If the thought of wrapping a bunch of favor boxes is overwhelming, keep the paper mache boxes simple and use fancy ribbon or craft paint to decorate the boxes. Also, instead of making box partitions, you can wrap your food items in wax paper or plastic.

We loved yesterday’s guest post from Marisa aka The Food-Sensitive Foodie about how to cater to your guests who have food allergies. It only takes one double dip of a chip to put your best friend into anaphylactic shock, so being a sensitive host is not only kind, but your family and friends will appreciate the gesture.

We decided to take Marisa’s advice up a notch and create these food allergy place cards. We know you can’t cater your reception menu to every food allergy, but you can help your guests out by letting them know what dishes to avoid. These cards cover most of the common food allergies, along with options for vegetarians and diabetics.

Feel free to use either or both of our place card options. In a buffet style meal, you can use one place card to check off the “free of” foods and set the cards in front of serving dishes. Or with a seated dinner, put the appropriate card in front of the guests who you know are allergic to just dairy, gluten, shellfish, etc. (And extra bonus points if you put the “I’m free of… nuts” card in front of your obnoxious uncle.)

Even if I Can’t Eat Cheese

Marisa is a Chicago-based health and cooking coach specializing in food allergies and helps individuals and families navigate the challenges of learning to live with food sensitivities, allergies, and intolerances.

I am loving this month’s MarryThis! Wine and Cheese Wedding. A reception like this is beautiful, delicious and affordable. Who doesn’t love those adjectives to describe their wedding? You get to nibble, nosh, sip and schmooze without having to stress about when to sit down or if that main dish is ever going to get on the table because you’ve got to get dancing.

Even this Food-Sensitive Foodie (who couldn’t get a lifetime commitment from gluten or dairy) can appreciate the delicate and delicious simplicity of a wine and cheese reception. I mean, it’s just so beautiful and practically effortless – especially when you’ve got a gorgeous spread on the table with the bread slices fanned around the edges of the silver platter, huge wedges of Brie and Manchego, bunches of grapes begging to be picked, and trails of nuts running through all of these delicious treats. Pretty, right?

But in this day of food allergy awareness, you might be thinking, “Oh. But Sally can’t eat gluten. And Missy is lactose intolerant. And isn’t Jenny dating that really whiny vegan? Ugh. I could never pull this off.” Turns out, with two simple food preparation steps, that Wine and Cheese Wedding that made your heart leap a little is still totally accessible. Here’s how:

Create separation. If you combine on one platter for aesthetics (which is a-ok), then put additional servings on a separate platter. A platter of assorted fruits is just as pretty as those grapes that are hanging out with the bread and cheese gang on the other platter. And separate bowls of nuts and baskets of bread mean that people can fill their plates with safe foods.

Double up. This adds an additional layer to the first rule. Now that you’ve got the individual platters, along with those aesthetically pleasing combined platters, make sure you have separate utensils. I can’t use a cheese-y knife to cut fruit and guests allergic to nuts won’t be able to scoop up safe foods with the nut spoons. Have double sets of utensils so that it cuts down on food contamination. It will keep your guests and their tummies happy.

A little note on dips and dressings: We all have that uncle who loves to double dip, stick his fingers in the hummus, or soak his bread in the juices to get all of the flavor. That’s all fine and dandy when it’s on his plate. If there are shared bowls of dips and dressings on the table, keep one to the side for your food-sensitive guests so that they can stick their clean spoon in a non-contaminated bowl of delicious and not have to worry if someone already dragged bread through it, leaving a trail of tummy-churning crumbs.

In the end, it’s your wedding day. You don’t need to accommodate everyone and the truth is, those of your loving friends, who already know how to manage their food allergies, should take it upon themselves to have some back-up snacks (I never leave home without a small pack of almonds or an energy bar). But these little steps will make it more delicious for everyone. Oh, and if you have a guest with severe allergies, share the menu with them ahead of time, and gently encourage them to bring their EpiPen. That nifty little lifesaver fits perfectly in any wedding-worthy clutch.
